MAKER OF DASSAI SAKE PLANS TO BREW “DASSAI MOON” IN SPACE WITH PRICE TAG OF ¥100M

Japanese sake maker Asahi Shuzo brewery, owner of the Dassai brand, has announced that the company will endeavor to brewing sake in the microgravity environment of space.
Based in Yamaguchi Prefecture, the brewery said it has been gained approval in July from the Japan Aerospace Exploration Agency to use Japan’s “Kibo” module in the international space station under its paid utilisation program.
A launch is now scheduled for the latter half of 2025, the company will send Yamada Nishiki rice, koji mold, yeast and water to “Kibo” where fermentation will take place.
About 520g of the fermented solution will be returned to earth in frozen form. Once processed into refined sake, a 100ml bottle of “Dassai MOON – Space Brew” will be created after reserving some for analysis.
The single bottle of “Dassai MOON – Space Brew” is slated for sale at a suggested retail price of ¥100 million (USD654,000).

Asahi Shuzo will announce details of the sale in due course and the full proceed will be donated to support future Japanese space projects.
In collaboration with Mitsubishi Heavy Industries and the Aichi Industrial Technology Institute, the brewery has been working on launch preparations.
These include conducting brewing trials under simulated lunar gravity conditions (approximately a sixth of earth’s gravity) replicated within the “Kibo” module.
The company said their long-term visions include using lunar water and rice to brew Dassai directly on the Moon.
